Long tables and tall tales.
Colonial times, slave trade, masks, utopias, and ... pirates! These are some of the themes in this gastronomic commentary accompanying this year’s Artist in residence, William Kentridge. Together with writer Andreas Liebe Delsett, chef Christopher Haatuft invites you on a voyage in Kentridge’s wash.
Expect communal dining and shared dishes, interwoven with tales of philosophical South Sea kings, Creole creativity, runaway slaves, and a generous dose of what Kentridge calls ‘the muchness of the people in the world'.
Among the ingredients are slave fodder from the Bergen region, Creole-style deep-frying, and a chicken that has crossed the seven seas. And once the final course has been served, we can only hope that every restaurant guest’s utopia will come true: that the chef takes a seat at the table, joining in for a toast.
